Muffin Tin Mondays

I came across a site this weekend that I absolutely love!  It’s called Muffin Tin Mom and she has a link up on Mondays of Muffin Tin Meals.  I think the idea is fantastic because having the six compartments will force me to offer more variety, which is healthier.  I have also implemented a rule that the kids have to eat one thing in each compartment, so they are at least trying each food.  I think this is going to make lunches so much fun and I already have a ton of ideas of how to incorporate different theme ideas, so that this can go along with homeschooling.

I have come to despise making lunches because I run out of ideas.  Ever since we added 2 more kids to our family, we never have enough leftovers to have for lunch anymore, so lunches are my least favourite meal to make.  No longer!  This Muffin Tin Meal thing is going to transform lunchtimes at our house.

Here is Day 1:

Carrots, red peppers, cucumbers, organic brown rice crisps, hummus, and orange slices
